#22-EGGY BREAKFAST – 3 RECIPES (+VIDEOS)

It’s snowing today. Winter is here, bringing us some winter wonderland sceneries, and sometimes, big freezing nightmares.
Winter makes things harder for me. So it’s time for some comfort food, right!?
I propose 3 recipes for a breakfast with eggs. They are all gluten free, dairy free, refined sugar free and lectins free.
I want to post them here, on my blog. But I also realize that when dealing with a pericarditis, or a chronic illness that causes brain fog and lack of energy, we don’t want to read pages on a computer screen. Moreover I am a very visual person. What about you?
I’m slowly learning how to film and edit short videos so that I would be able to post them on Instagram and on my new Youtube channel.

Here are the 3 recipes for a delicious eggy breakfast.
1/ REVISITED MATOUFÉ
Ingredients:
Pancetta
2 eggs
Salt and pepper
1 tablespoon of buckwheat flour
Water (facultative)
Olive oil
Cook some pancetta in a pan. I like to use the pancetta for carbonara spaghetti.
Whisk 2 eggs in a bowl with salt, pepper and 1 tablespoon of buckwheat flour. Add some water if necessary (not too much). Whisk very well.
Remove the excess fat from the pancetta and add some olive oil in the pan.
Pour the eggs preparation into the pan and cook while mixing constantly.
Serve with beets (or another vegetable that you like) and some gluten free bread.
2/ CURRY EGGS AND ENDIVE
Ingredients:
Spring onions
2 eggs
Salt and pepper
Curry powder
Garlic powder
Water
1 endive
Nut oil
Cider vinegar
Pine nuts
Cook 1 or 2 sliced spring onions in a pan with olive oil.
Whisk 2 eggs in a bowl with salt, pepper, 1 teaspoon of curry and 1 teaspoon of garlic powder. Add some water (not too much). Whisk very well.
Pour the eggs preparation into the pan and cook while mixing constantly with the spring onions.
Serve on a plate with 1 sliced endive, salt, pepper, nut oil and cider vinegar.
While the pan is still hot, slightly grill 1 tablespoon of pine nuts and top the endive when it’s ready.
3/ APPLE CRÊPES (PANCAKES)
Ingredients:
50 g. of buckwheat flour (1.76 oz.)
100 g. of water (3.53 oz.)
1 egg
Salt
Vanilla
Olive oil
1 apple
Coconut blossoms syrup
Whisk the buckwheat flour with the water in a bowl.
(Facultative: soak for 12 hours for a better digestibility).
Add 1 egg, 1 tablespoon of olive oil, 1 pinch of salt and some vanilla. Whisk well.
Peel, remove the center and slice the apple. Cook 4 or 5 slices in a pan with olive oil.
Turn the slices over and add 1 ladle of crêpe batter over them.
Cook for 2-3 minutes and turn the crêpe over when the batter is cooked.
When it’s ready, serve on a plate with some coconut blossoms syrup.
You will have 2 or 3 crêpes with this recipe. Another idea is to replace the apple by blueberries, for example.
