#21-DAIRY FREE DIET

Here is a new part of the series on the non-inflammatory diet.
I always doubt when to choose a title. Lactose free? Without animal milk?
Dairy free diet seems sufficiently meaningful to me. We can see what we're talking about, right!?
I am not an expert and I still have a lot to discover.
So let's dive in!
WHAT I AVOID
Animal milk: cow, goat, sheep, buffalo.
I especially avoid cow's milk and its derivatives: cheese, yogurt, cream, ice cream, butter. Ghee (clarified butter) would be okay, but I don't eat enough to keep it, and I prefer to use olive oil or coconut oil, for example.
If I have to crack, I will choose a sheep's milk yogurt (with lemon) or a mozzarella di buffala in summer. I try my best, but I'm not perfect!
Having poor digestion, these cheat days are rare.
WHAT I EAT INSTEAD
First I test if I can replace milk by water, quite simply. It works for omelets and pancakes.
Vegetal milk (almond, hazelnuts, oats, spelled) is the most popular alternative. I often choose almond milk for drinks or oatmeal in the morning. You have to test several to find the right one.
Lacto-fermented tofu, plain or in preparation, can replace cheese on bread, biscot or in salad. There are some with garlic and fine herbs, 5 berry pepper, nuts, for example in the Le Sojami brand. It's not the same as cheese, but I couldn't find my account in "fake" cheeses (lactose free). I love cheese and it is arguably the most difficult to replace.
However, I quickly adopted coconut yogurt (Abbot Kinney's plain does not taste coconut) in my breakfast recipes. See my fruity breakfast recipe, for example.
Olive oil and coconut oil replace butter, as already mentioned.
And finally, there are culinary vegetal creams, but here too, I don’t find the real flavors of traditional sour cream. Likewise for ice cream, I didn’t find yet satisfactory alternatives.
You have to get used to new tastes, have new gastronomic experiences. And sometimes, confronting the looks and comments of others who do not understand why the disease leads us to make such choices.
MY PATH MAY BE DIFFERENT, BUT I AM NOT LOST.
